Boo-tiful Cake Pops

Happy Halloween – what better way to celebrate than with CAKE POPS?!

These were SO fun to make.

And even more fun to eat. Carrot cake + cream cheese frosting…definitely one of my favorite cake pop flavors. Have you ever made cake pops (if not, check out my tutorial on my profile)!?

Just a Tip!

You Will Need...

  • 1 package (16 oz.) Vanilla CANDIQUIK Coating
  • 1 package (16 oz.) Chocolate CANDIQUIK Coating
  • 1 box Carrot Cake mix (plus ingredients required for cake)
  • 8 oz. Cream Cheese Cake Frosting
  • Orange (oil or powder based only!) food coloring
  • Assorted decorating sprinkles (triangles and hearts)
  • Edible Gourmet Writer (I used the Americolor Gourmet Writer)
  • Lollipop sticks

Instructions

First things first – you will need some basic supplies and pinch of patience. Feel free to make all of the characters or just one. The ghosts, by far, were the most simple. The ingredients listed are for ALL of the characters. TIP: divide your cake balls into 2 batches & work on ONE character at a time.

CAKE BALL DIRECTIONS: yields approx. 40-46 cake balls Prepare and bake cake mix as directed on box. Crumble cake into a large bowl. Mix thoroughly with frosting.

Chill mixture for approximately 2 hours in the refrigerator (you can speed this up by placing in the freezer). Roll mixture into 1” balls; place on a wax paper lined baking sheet. You may need to chill the cake balls slightly longer (20 minutes or so). Remove from fridge and insert a lollipop stick into each cake ball.

CAT Directions: 1. Melt Chocolate CANDIQUIK according to the package directions. 2. Holding the lollipop stick, dip cake pops in melted chocolate, covering completely. Let the excess coating drip off; place on wax paper. 3. Before the coating sets, quickly and carefully attach a heart-shaped sprinkle as the nose. Once dry, use a toothpick dipped in Vanilla CANDIQUIK to draw on eyes and whiskers (you can wait to do this until we melt the vanilla).

PUMPKIN/Jack-O-Lantern Directions: 1. Melt Vanilla CANDIQUIK according to the package directions. 2. Add orange food coloring (oil or powder based only) to Vanilla CANDIQUIK until desired orange color is established. (If you find the coating is too thick or lumpy because of the coloring, stir in a spoonful (or so) of solid vegetable shortening.) 3. Dip cake pops in CANDIQUIK, covering completely, let excess coating drip off; place on wax paper. 4. Before coating is set, attach 3 triangular shaped sprinkles as the eyes and nose. Then, once dry; use the black edible marker to draw the mouth.
